Bayly, Phil


Bayly, Phil (1954–), is an influential Australian bar owner whose key contribution to contemporary cocktail culture was the promotion of tequila in Europe and Australia. Born in Adelaide, Bayly moved to Amsterdam in 1979 to pursue an interest in painting, which led to a chance encounter with Tomas Estes, who had just opened Cafe Pacifico. Developing a passion for tequila, Bayly toured Mexico in 1982, seeking out traditional cantinas and immersing himself in Mexican bar culture. He and Estes went on to open fifteen more tequila bars across Europe, North America, and Australia in the 1980s and 1990s, educating their customers along the way.
