orujo , colloquially called aguardiente de orujo, is a term used in Spain to designate a grape pomace spirit. EU regulations have demarcated only one orujo, orujo de Galicia. Any of the legal grapes in Galicia may be used for its production, though the regulated grapes of Rias Baixas (primarily albariƱo, loureiro, and treixadura) are most often used. Top orujo spirits offer concentrated and pleasing aromas and flavors of their foundational grapes. Like many such pomace spirits, the character and quality vary from producer to producer, but at its best, this can be a marvelous spirit, comparable to the best amongst grappa producers.
