The Gin Rickey

The Gin Rickey , with gin, lime juice, and sparkling water, is a cooling highball that is the official Cocktail of Washington, DC. It is a variation on the original Rickey, which was made with bourbon whisky, and is first found in print in 1893. See Rickey.

Recipe: In a tall glass (240–300 ml), combine 45 ml gin (London dry or Old Tom) and the juice of half a lime. Add ice cubes and the squeezed-out lime shell and top with chilled sparkling water. Stir briefly.
