Just as in beer production, the first step of whiskey production is the mash, with hot water and 100 percent malted barley. The goal is to achieve the greatest volume of fermentable sugars. From the mash tun, the wort is pumped into the fermentor with distiller’s yeast to produce the desirable flavors and aromas.
