WhistlePig is always trialing a wide range of finishing casks, some of which end up in unusual products such as Boss Hog—an annual rye whiskey that incorporates flavors and inspirations for various locales around the world. Other experiments have included driving rye across the country, to see how it affected the aging process, to including a cold-smoke infusion. Mitch also describes how his experience in winemaking and brewing have informed his perspective and ideas on innovation. Finally, he gets into how the proof of the whiskey can affect the aging and the character of what gets bottled.
