cocuy or cocoy

From The Oxford Companion to Spirits & Cocktails

is an agave-based spirit made in Venezuela from Agave cocui, which grows in the northwest corner of the country. See agave. It is produced in various strengths, sometimes from 100 percent agave and sometimes from a mix of agave and sugar cane, and is sometimes aged in oak barrels. There are at least eight registered brands in production, along with a good deal of unregistered production. See Andean South America.
