Everclear is a brand of neutral spirits distilled from grain established at the beginning of Prohibition by the American Distilling Co. of Chicago (for “medical” use) and now owned by Luxco, a spirits manufacturer and importer based in St. Louis, Missouri. At 95 percent ABV (190 proof), it is the highest-proof spirit available—water and ethanol form an azeotrope slightly above this concentration, meaning that distillation cannot produce anything higher proof. (A 151-proof version of Everclear is also available, sold in US states whose laws limit alcohol content in spirits.) Because its high alcohol content can very efficiently leach flavors from fruits, spices, and other ingredients, Everclear is well suited to serving as the base for infusions like limoncello, compound gin, and bitters.
