From The Oxford Companion to Spirits & Cocktails

is a mixed drink made with a specified brand of liquor “called” for by the guest, instead of allowing the bartender to use the house’s standard “well” or “rail” brand. These drinks tend to be more expensive than well drinks because they generally use premium or super-premium liquor. Example: instead of ordering a Gin and Tonic, a guest will call for a “Beefeater and Tonic.” Some establishments feature “you call it” specials, where the guest “calls” for what they want.Regan, Gary.
