Field, Colin Peter

From The Oxford Companion to Spirits & Cocktails

(1961–), has been the head bartender of the legendary Bar Hemingway at the Ritz Paris hotel since its revival in 1994. Born in Rugby, England, Field came to Paris in 1981 to study at the Ferrandi hotel school and worked at several bars and restaurants in the city before settling in at the Ritz. He has created many well-regarded cocktails, two of the most iconic being the Picasso Martini and the Serendipity. During his tenure at the Ritz, Field has been named the world’s best bartender several times by prominent magazines and has proved a worthy successor to Frank Meier, being an authentic hotel bartender of the old style.
